Chicken Tortilla Soup in a Crock Pot

I don’t know about you, but right now I’m taking a break from all things holiday related and standing in the kitchen all day making a big meal isn’t happening. You may have noticed I’ve been sharing with you some of my easy meal recipes lately. There the ones I go to when I’m either being lazy, am pressed for time, or just looking for something easy to fix (and right now that’s what I’m going for). 

If you can open a can you can make this delicious soup. Have you had the chicken tortilla soup at Chili’s? If so this tastes exactly like the version on their menu. We like to top ours off with a handful of shredded cheese and serve it with scoop tortilla chips. Get out your crockpot and whip this up for dinner, you won’t be disappointed and the best part is it takes less than 5 minutes to prepare!

Ingredients
  1. One Can Per Item
  2. Cream Chicken Soup
  3. Green Enchilada Sauce
  4. Corn
  5. Black Bean
  6. Pinto Bean
  7. Chicken Broth
  8. Crushed Tomato
  9. Diced Chicken
  10. One Envelope Taco Seasoning
Instructions
  1. Open all 8 cans and taco seasoning dump into a crockpot. Heat and serve with shredded cheese or sour cream on top.
Notes
  1. I use a rotisserie chicken instead of canned chicken.

  2. Steve loves to make soup, but doesn’t own a crock pot. Maybe I should get him one!

    1. Carol if enjoys cooking he probably doesn’t mind standing over a pot staring soup. Just remember it’s one more appliance you have to find a storage spot for, but I do love my crockpot. I actually have 4 in different sizes.

    2. Most crockpot soups can just as easily be made in a soup pot on top of the stove. I seldom use my crockpot anymore since I’m retired and have time to cook something that needs attention now and then. I make lots of soup and either way, I’m sure this recipe will be good.

Dawn..it looks delicious!! yesterday in the crock pot I put chicken breasts with garlic salt and chicken broth and added 2 cans of cream of chicken soup and after about 5 hrs added a box of stuffing mix and it was delicious!!! Today I will heat up the left overs and serve with mashed potatoes!!!
