FAVORITE COOKBOOKS
Baking for me is all about using natural, wholesome, and healthy ingredients from scratch. Iโve spent a day organizing my baking cupboard (pics to come) in preparation. My go to cookbooks with fabulous recipes are from Danielle Walker’s cookbooks THIS, THIS, AND THIS .
Iโve tried several recipes over the years that just fall short in flavor and density. Thereโs something about a muffin that needs to be light and fluffy not sticky and dense. So many of the healthy recipes are something Iโd try once and never go back to it again. Not these, this woman is amazing when it comes to brewing up treats that taste just like the unhealthy version. My family hasnโt noticed the change at all so Iโm keeping this little secret all to myself.
GETTING IT RIGHT
On the down side Iโve developed a horrible rash referred to as Keto Rash you can Google it and see the ugly photos for yourself. Itโs what happens to some people when their carb intake is to low and apparently thatโs what happened to me. I spend Sunday in urgent care, and if you know me I donโt go to a doctor unless Iโm dying, so it was pretty drastic for me to drive myself to get help.
After 4 days of the rash spreading, and uncontrollable itching I just couldnโt take it. After doing a little more research I found that if I up my carb intake is should go away on itโs own. That gave me the go ahead to make homemade French-fries in my air fryer and I also had a banana for breakfast. Livinโ on the carb edge right?
PLANNING AHEAD
The doctor prescribed a steroid but Iโm not one to take meds if I donโt have too. Why does healthy eating have to be so difficult sometimes? All I know is Iโm on a serious mission to take life slower and cook and bake from scratch for the majority of our meals.
I meal prep on Saturdays it makes my cooking and baking much easier, with no looking at the clock only to discover nothing is planned for dinner. My family consists of men, and men like complete meals. For me Iโm just fine with grabbing a snack and calling it good. After a hard days work my hubby and sons want a full sized mans meal.
LOCAL AND ONLINE SHOPPING
First I hit the farmers market to get any fruits and veggies I need for the week. Then the health food store for any ingredients I donโt have on had that are needed in that weeks recipes. Online shopping is my friend and I use that source most of the time for the staples I use on a daily basis.
Keeping a well-stocked pantry is the key, and making sure I use what I have before I reorder makes sure the stock get rotated. What you see today is cranberry orange muffins and theyโre delicious. I tried to find a link to the recipe online but youโll have to buy the book to get it. I understand she canโt give all her talent away for free.

When I was first married, I did all of my baking from scratch. I slowly got away from it with kids and teaching taking up so much of my time. Nowadays I bake so rarely, but it tends to mostly be from scratch. And as I type this, it makes me want to bake something.
Carol I’ve went back and forth over the years how I do things but now for me it’s more of a health thing. I want to know the ingredients I’m using and I do enjoy the process. It’s relaxing to me to keep my hands busy.
