Cheesy Broccoli & Rice Soup Recipe

Cheesy Broccoli & Rice Soup Recipe
This soup can be done in a crockpot or on the stovetop. When my men are away I always make a meatless meal for myself. I don’t care if I have meat so easy one pot food is what I normally concoct. Most of the soup recipes I make can be doubled and one batch can be frozen. This recipe is great for that, it freezes well and makes for a hearty meal on days you don’t feel like cooking. I put the extra batch in a ziplock and lay it flat on the shelf to freeze, it takes up less space this way and once it’s frozen I can stack it with my other soup meals.

Cheesy Broccoli & Rice Soup

Ingredients
  1. 1 16 oz. Bag Frozen Broccoli
  2. 1 Large Sweet Onion Dices
  3. 1 Cup Instant Rice
  4. 32 oz. Chicken Stock
  5. 8 oz block of Cheddar Cheese Shredded
  6. 1 tsp Olive Oil
  7. 1t tsp Butter
  8. Salt
  9. Pepper
Instructions
  1. Add Butter and Oil to stock pot and saute Onion till tender, Add Broccoli and 1/2 the Chicken Stock. Simmer until Broccoli is tender. Use Stick Blender and puree Onion and Broccoli to a small chunk size. Add Rice until cooked. Add Cheese and remaining stock. When cheese is melted it is ready to serve. (Optional top with sesame seed)
Notes
  1. This can be done in a crock pot, just add the rice the last hour of cooking.

    I have had the broccoli rice casserole but never tried the soup. I think with all the snow we are going to get tomorrow I may have to try this for a nice warm dinner. Thanks for the recipe. Sounds really yummy.

    This soup sounds so good. I think that I will be making it in the next couple of days . We are going through a deep freeze right now so at -42 C it will be welcomed.

    Just made this soup for husband and boys that are sick but tired of chicken soup. Used leftovers I had on hand and also threw in some leftover ham. Delicious!!! But as a side note, if adding ham don’t add additional salt. Thanks for the recipe ! !

      Tammy I’m so glad you enjoyed it and thanks for the ham and no added salt tip. I love ham but hubby is allergic to pork so I only eat it when he’s out of town. I don’t want his food getting contaminated with mine.

    This is such a great soup recipe! Some of the cheese didn’t melt completely. I️ used shredded cheese from a package instead of shredding my own. Do you think the packaged shredded cheese had something added which made it clump?

      Sherry, yes it does and the agent makes it so it doesn’t stick together in the package, that won’t happen if you shred your own 🙂
