How to Freeze Sweet Corn | Creative Cain Cabin This is my all time favorite freezing tip for sweet corn. Hubby and I work as a team every year and put up enough corn to get us through the winter. There’s nothing better in the dead of the winter than the taste of fresh corn, it takes me back to summer with every bite.

  1. Fresh Picked Sweet Corn
  1. Shuck fresh corn
  2. Fill a large pot 3/4 full with corn and cover with water. Bring to a boil and boil for 4 minutes.
  3. Remove corn from pot and put ears into a sink or large container filled with cold water.
  4. Cover corn with ice and let stand for 4 minutes.
  5. Remove ears from ice and cut off the cob.
  6. Put corn into freezer bags.
  1. 4 dozen ears will yield 6 quarts of corn.

    Thanks for the corn freezing recipe Dawn..I always blanch it in hot water but never put it into ice water..I just let it cool before I cut it off..I will try your method..and thanks to all you other ladies..looks like I have some pinning and printing to do..

    1. Nancy the ice stops the corn from cooking so it tastes fresher.

  4. Dawn, I don’t even blanch the corn when I freeze it! I just cut it off the cob and add salt water to the freezer bag with the corn! And you’re so right. Nothing tastes better than corn in the dead of winter. Pinning your beautiful graphic!

  6. I’m going to try your freezer corn recipe. My grandma used to freeze corn every year and I loved eating it in the middle of winter. This brought back wonderful memories!!
