I find it impossible to believe that July is almost over. Where has the summer gone? Our weather has been so crazy it’s hard to tell what season we are even in, but it feels like fall here. For me fall is when I like to find new recipes and canning methods. There’s nothing better than a hearty, homemade meal on a crisp Fall day. This is my all time favorite freezing tip for sweet corn. Hubby and I work as a team every year and put up enough corn to get us through the winter. There’s nothing better in the dead of the winter than the taste of fresh corn, it takes me back to summer with every bite.
- Fresh Picked Sweet Corn
- Shuck fresh corn
- Fill a large pot 3/4 full with corn and cover with water. Bring to a boil and boil for 4 minutes.
- Remove corn from pot and put ears into a sink or large container filled with cold water.
- Cover corn with ice and let stand for 4 minutes.
- Remove ears from ice and cut off the cob.
- Put corn into freezer bags.
- 4 dozen ears will yield 6 quarts of corn.
