Gluten Free Vegan Chocolate Chip Cookie Recipe

Every day is a good day for a Chocolate Chip Cookie, right? Have you ever searched for gluten free cookie recipes only to find out once you’ve made it it’s really not all the tasty? I know it’s hard to make gluten free cookies, they like to fall apart and most times they’re flat and not very pretty looking. Well not this recipe, it’s my Sister In Laws recipe. She used a standard cookie base and tweaked it to get a moist and chewy chocolate chip cookie and I want to share it with you today.
I’ve struggled finding baked good recipes that are gluten free that are delicious and don’t require a bunch of strange ingredients. For me I don’t want to have ingredients on hand that I’ll only use once. This recipe calls for the standard things you’ll need in making any gluten free baked good recipe.

- 1 1/2 Cup Almond Flour
- 1/2 Cup Coconut Flour
- 1/2 tsp Baking Soda
- 1/4 tsp kosher salt
- 6 T Raw Honey
- 4 tsp Melted Coconut Oil
- 1/8 C Coconut Butter
- 2 tsp Pure Vanilla Extract
- 1/2 C Chocolate Chips Libbys Brand

- Preheat oven to 350. Mix all ingredients, except chocolate chips, in a medium sized mixing bowl. Mix until everything is evenly moistened. Stir in chocolate chips. Make 1" balls of cookie dough with your hands, pressing together as you make them. Add to a preheated baking stone. Flatten cookie dough balls. Bake 8-12 minutes. Take out of oven and allow to cool on the baking stone. Cookie will be fragile until completely cooled. Store in an air tight container.
