Healthy, Paleo, Gluten-Free Freezer MeatballsI’m always looking for a way to have a delicious meal ready in minutes, but I also want it to be healthy. Freezer Meatballs are something I like to keep on hand at all times. When I purchase the ingredients I like to make a big batch all at once, and separate them into smaller bags to freeze. 

There’s many nights that I fix things for my hubby and son that I don’t like, so when that happens I grab a serving of these meatballs out of the freezer and warm them up for myself. These are made with turkey sausage and ground beef so they have just enough spice that they work well as a breakfast sausage too. Another favorite reason I love these, is they’re so easy to prepare and require no fancy ingredients, I bet you already have everyting you need on hand to whip up a batch. 

Here’s a trick:

  • To avoid rolling out the meatballs by hand I use a small cookie scoop to form the meatballs, and place them in a 24 cup mini muffin tin to cook. It makes 24 perfect meatballs every time!

Ingredients
  1. 1 pound lean ground beef
  2. 1 pound turkey sausage (or sausage of your choice)
  3. 1/4 tsp pepper
  4. 1/4 tsp sea salt
  5. 1/2 tsp garlic powder
  6. 1/2 tsp onion powder
  7. 1/4 C fresh parsley
Instructions
  1. Place all ingredients into a mixer and combine thoroughly. Use cookie scoop and create meatballs, adding one to each muffin cup. Bake at 400 for 12-17 minutes. Serve with your favorite sauce or eat them plain.
