Sweet Potato Apple Cranberry Bake

I’m always asking my family if anything sounds good for dinner, and I always get the same response, “whatever you make will be fine”. Well if they only knew I get tired of the same old recipes made over and over again so any time I can spruce up a meal by adding a twist to a healthy side dish I’m all for it.

Not only is this an easy side dish it’s delicious and just darn pretty! If you’re looking for something extremely easy to whip up, healthy, and tastes amazingly like fresh baked apple pie…..This is it! No fancy ingredients just fresh fruits and veggies with a pinch of cinnamon. It even looks festive, like party food. I know this may sound a little strange but it’s even good on oatmeal. Just add a spoonful on top and enjoy.

Ooooo…sounds delicious!! I would like to make this over the upcoming holidays – maybe serve it with roast pork. I’ve printed it and will try to remember to come back and comment on how well it was liked.

Jen, It sounds like everyone thinks pairing it with pork is the winning combination. I’ll have to try that!

This looks good and I have all the ingredients. But I must be missing something. When do you add the melted coconut oil?
