Canning sloppy joe base recipe FROM MY GARDEN CLEAN OUT
I had a goal this summer to process and store every thing that my garden produced. At the last minute with an abundance of peppers and onion I made sloppy joe base to have on the pantry shelf.

I’ve never purchase ready made mix in a can, I’ve always made mine from scratch so I told myself why not make a big batch and can it to have for a quick grab meal.
This was the first year that I planted onion and had a fantastic crop of those. I ended up planting them by stumbling on free onion sets, as many as anyone wanted, at our local feed store so I thought what the heck I’d give it a try. Wow I was so happy to get close to two bushel of nice big sweet onions. I’m defiantly going to plant onions again next year.
I put in 18 pepper plants, that I grew from seed, a combination of Sweet Peppers (in red, yellow, and orange) , Jalapeños Pepper, Banana Pepper, and Pablano Peppers. Every plant did fantastic and produced heavily right up until frost.
I’d already put in the freezer countless bags of diced onions, peppers, and pepper half’s. Made cowboy candy from 20 pounds of Jalapeños and Bannana mixed and those plants just kept on producing. At the last minute I whipped up 14 pints of sloppy joe base. I can mine in a concentrate, you can add water and cook it down when you add it to your ground meat or just heat and serve it the way it is. I prefer doing it without the water, it’s thick and just the right consistency in my opinion. One pint will be exactly enough for 2 pounds of ground meat.
SLOPPY JOE BASE
Yields: 14 pints
16-20 Large Bell Peppers Chopped (I used a combination of sweet bell, banana, pablano, and a few Jalapeños to come up with what I felt was consistent to the right amount of peppers)
6-8 Medium Sweet Onions Chopped
1 Cup Minced Garlic
2 T Oil
Add the above ingredients to a 12 quart pan. Drizzle with oil and sauté until tender. Once tender add:
1/4 C Liquid Aminos (if you don’t have this you can add soy sauce)
1/2 C Chili Powder
1/2 C Dry Mustard
2 1/2 C Brown Sugar
#10 Can Ketchup
Mix everything together and heat through. Blend with an immersion blender until smooth or slightly chunky (whatever your preference)
Add to jars, follow all canning guidelines listed in the Ball Canning Book. Add flats and rings and Hot Water Bath for 20 minutes for pints. Keep on your pantry shelf for a quick meal of sloppy joes!

I had lovely blooms in my cutting garden and gathered so many seeds that I followed your lead and shared with my readers as well. Aren’t they amazing? And they give off so many seeds it’s unbelievable. I’m so happy to hear yours bloomed and you were able to share them. I collected half a brown paper bag of them again this year. Just never got around to sharing them here on the blog. Maybe I can find a place to sew more seeds next year around my place. You’ll love the Joe recipe. I’ve already been eating it. When hubby is out of town it’s an easy meal for myself.
Miss having a garden. Use to help my parents with their LARGE garden. At the end of the season we would may what we would call “Gobadegach”. It would be wonderful over mashed potatoes or noodles. Or, even as a flavorful vege side dish. Adding fresh dill was the perfect touch.
Just typing about it bring happy thoughts of my parents who are now deceased. Thank you for sharing an option on end of season bounty options!

I didn’t garden for years. I gave it up and dont know why but the last several years I’ve been back at it like crazy, growing everything we eat. I remember my mom canning all season long (she has passed now too) Theres so many questions I wish I’d asked her but it’s to late now. For some reason I never helped her can.
