Sweet Potato Apple Cranberry Bake

I’m always asking my family if anything sounds good for dinner, and I always get the same response, “whatever you make will be fine”. Well if they only knew I get tired of the same old recipes made over and over again so any time I can spruce up a meal by adding a twist to a healthy side dish I’m all for it. 

Not only is this an easy side dish it’s delicious and just darn pretty! If you’re looking for something extremely easy to whip up, healthy, and tastes amazingly like fresh baked apple pie…..This is it! No fancy ingredients just fresh fruits and veggies with a pinch of cinnamon. It even looks festive, like party food. I know this may sound a little strange but it’s even good on oatmeal. Just add a spoonful on top and enjoy.

Ingredients
  1. 1 Medium Sweet Potato
  2. 1 large Honeycrisp Apple
  3. 1/2 C Fresh Cranberries
  4. 1/4 C Melted Coconut Oil
  5. 1 tsp. Butter
  6. 2 Pads Butter
  7. 1 tsp Cinnamon
Instructions
  1. Dice sweet potato and apple. Add to buttered baking pan (1tsp. butter) along with cranberries. Top with 2 pads of butter. Sprinkle with cinnamon and bake at 350 covered for one hour. Sever while warm.
Notes
  1. This recipe tastes just like fresh baked apple pie, but it's much healthier.
