4 Ingredient Summer Salad

Summer is right around the corner, and this body is not in shape.  I cringe when I think about putting shorts on. Guess it’s time to find some low calorie, delicious salads to eat. Here is a favorite of mine.
Strawberry Pecan Salad
4 Cups Spring Mix Salad (20 Calories)
9 Pecans (210 Calories)
3 Large Strawberries Sliced (23 Calories)
1 tbsp. Creamy Poppy Seed Dressing ( 60 Calories)
310 Calorie Meal
It holds me for hours without feeling hungry, and it’s so easy to put together.  I am the only one home during the day and I like easy meals that require no cooking.

    Dawn, I love salads like these! I know what you mean about the shorts, I hate the thought of putting on my swimsuit! Oh well, summer will be great anyway! Jean

    I love strawberries in salads, this version sounds delicious! Are these some of your own berries? Our strawberry season (Texas hill country) has been phenomenal – some local farms STILL have berries available, thanks to a slightly cooler (for us) May.

    Is there a substitute for the dressing..I don’t think I can find creamy poppy dressing…I’d love to this Salvador. Please suggest.
